The story behind the brand.
Every great story starts with a leap of faith.
On the 2nd of February 2020, we decided to put all our cards on the table and open Green Colibri. We didn’t know if it would succeed. We didn’t know what the future had in store. To be honest, we didn’t even know if we had what it took to run a small business. We only knew one thing: we wanted to create a place where people could enjoy great coffee, good food, and feel at home.
Just over a month later, on the 12th of March 2020, the world changed. COVID-19 arrived, bringing uncertainty, lockdowns, and challenges that no new business could have prepared for. Overnight, our dream became a test of resilience.
There were moments when giving up seemed like the easier choice. Long days turned into even longer ones — 14-hour shifts, endless lockdowns, delayed deliveries, torn coffee bags, and countless obstacles that only small business owners truly understand. Looking back, it wasn’t always easy, but every challenge taught us something valuable. Every setback made us stronger.
Somehow, the stars aligned. More importantly, our community believed in us. One cup of coffee, one conversation, and one smile at a time, Green Colibri slowly became more than just a café — it became a place filled with people, stories, and memories.
Today, we are incredibly grateful to still be doing what we love.
But why Green Colibri?
Our name is inspired by an old story about a tiny hummingbird — the Colibri.
One day, a great fire broke out in a beautiful forest. Terrified, all the animals ran away to save themselves. Only one little Colibri flew towards the river, picked up a single drop of water in its tiny beak, and carried it back to the fire. Again and again.
The other animals watched in disbelief. An old elephant asked, “What do you think you’re doing? You can’t stop the fire.”
The little Colibri looked up and simply replied:
“I know. But I am doing what I can.”
That simple sentence has become our philosophy.
We believe that even the smallest actions matter. A carefully prepared coffee. A warm welcome. A genuine smile. Choosing quality ingredients. Supporting local producers whenever we can. Creating a space where people feel comfortable, relaxed, and valued. Individually, these may seem like small things. Together, they make all the difference.
The Colibri reminds us that passion is stronger than fear, that perseverance is more powerful than obstacles, and that meaningful things are built one small step at a time.
Green Colibri was born from a dream, survived through determination, and continues to grow because of the incredible people who walk through our doors every day.
